Ingredients:
- 1 cup diced ham
- 1 large head romaine lettuce, chopped
- 1/3 cup diced red onion
- 1/2 cup chopped pecans or roasted peanuts
- 1/2 cup cooked chick peas
- 1 medium cucumber peeled and diced
- 2 small to medium tomatoes, diced
- 1 cup diced Havarti, Monterey Jack, or mild Cheddar cheese
- 1 tablespoon chopped fresh parsley

- Vinaigrette
- 1/4 cup balsamic vinegar
- 1 teaspoon honey Dijon mustard
- 1/2 cup good quality olive oil
- salt and freshly ground pepper

Preparation:
Heat a skillet; spray with vegetable cooking spray or a little butter then brown ham. Combine ham with the chopped lettuce, onion, pecans, chickpeas, cucumber, tomato, cheese, and parsley; toss to mix well. In a measuring cup or small bowl, combine the balsamic vinegar and mustard. Gradually whisk in the olive oil; season with salt and pepper to taste. Arrange on individual salad plates on a bed of tortilla chips with dressing on the side.
